Fallis is the only person in the world to have earned both the prestigious Master Sommelier diploma from the International Court of Master Sommeliers and the Advanced Certified Wine Professional title from the Culinary Institute of America. She is also a French Wine Scholar and an instructor at the San Francisco Wine School.

Introduced to wine while backpacking around Europe in college days, she honed her skills later when she returned to live in Florence and Paris. Upon her return to New York she worked with Chef Alain Sailhac at Le Cirque, Leona Helmsley at the Helmsley Palace Hotel, and Kevin Zraly at Windows on the World. Her most recent restaurant position was as Wine and Beverage Director of Micheal Mina Group's Aqua in San Francisco. From Manhattan to Honolulu, Hollywood, Aspen, Monaco and Cannes, Catherine has shared her wine expertise with novices and collectors including Heather Locklear and Richie Sambora, Nicolas Cage, Brad Pitt, Kevin Costner, Antonio Sabato Jr., Chris Botti, Diana Krall, and Robert Redford.
